Directions

Step 1
Fish Curry

fresh cod
fresh coriander
fresh spinach
coconut milk
naan bread

To a blitzer add:
1 tablespoon of olive oil
curry leaves
2 x teaspoons turmeric powder
1 x teaspoon sweet paprika
whole green chilli
whole bulb of garlic
chunk of ginger
one small onion
blitz into a paste.

cut cod into chunks

in a frying pan heat a table spoon of olive oil
add teaspoon of mustard seeds and fry with lid on, until popped
add the paste and cook for two minutes
add a can of tomatoes and a can of coconut milk
reduce until sauce has thickened
when sauce has thickened add spinach and cod chunks

cook for 12 minutes until ready for serving
DO NOT STIR, LIFT PAN AND SHAKE GENTLY OCCASIONALY!!!

prepare fresh corriander

put naan bread in oven for 10 minutes at 180c
